Founded by Steve Millan, a senior hospitality executive and advisor with more than 25 years of experience, Blue Hospitality partners with restaurant owners, hospitality groups, and consumer-facing businesses navigating growth, turnaround, and operational complexity.

A former Chief Operating Officer and Vice President of Operations, Steve works closely with ownership and leadership teams to translate vision into action—building scalable systems, strengthening margins, and delivering consistently elevated guest experiences. His career spans single-concept launches through multi-unit, multi-state portfolios generating more than $100 million in annual revenue.

With deep expertise in P&L management, operational design, and team leadership, Blue Hospitality delivers strategic, hands-on guidance that drives meaningful improvement—swiftly, effectively, and with lasting impact.

In addition to direct advisory leadership, Blue Hospitality provides access to a curated network of highly experienced industry experts, including accomplished chefs, seasoned managers, master sommeliers, project managers, local PR firms and and hospitality-focused recruiters. This flexible model allows clients to engage senior talent precisely when needed—bringing specialized insight and execution power without the burden of permanent overhead.

While headquartered in New York City, our work spans major domestic and international markets. We have planned, opened, and operated hospitality venues across North America and abroad—including within hotels, resorts, and casino environments—bringing a market-specific, on-the-ground perspective to every engagement, from Atlanta, Washington, D.C. and Miami to Dallas, Los Angeles, Las Vegas, Napa Valley, and Hong Kong.
